Now I have to forewarn you, and maybe it’s just me with this muffin, maybe I’m making them too big ๐Ÿคท๐Ÿผโ€โ™€๏ธ I don’t really know (I probably am filling the cups up too much ๐Ÿ™ˆ)… but so far, the two times I’ve made these absolutely delightful, tasty muffins, the tops break off ๐Ÿฅบ when I’m trying to get them out of the pan ๐Ÿ˜ญ

BUT!

Here’s the silver lining that my sweet husband pointed out-
the tops are the best part ๐Ÿ˜‹

And then, I put the bottoms in another container and we devour it all within days ๐Ÿ˜‹

Hi ya’all! So it’s Sunday. And preschool is officially over ๐Ÿ˜ญ๐Ÿ™€๐Ÿ˜ฌ๐Ÿ˜ฉ I’m feeling many emotions about it as I’m sure you can feel just reading this lol. I’m happy, sad, excited, nervous, and straight up a bit overwhelmed with the thought of my first, precious little girl starting the journey of k-12. She is an amazingly smart, oh so sweet, tender little gal that wears her emotions on her face and sleeve and heart (whatever the expression is ๐Ÿ™†๐Ÿผ๐Ÿ™ˆyou know what I mean though, right?!). The tears poured out of this poor girl at her preschool graduation. And it was the sweetest, most heart breaking, most amazing thing to watch her push through those tears and sing the songs they’ve been practicing and walked and got her “diploma” but man was it painstakingly hard to watch๐Ÿ˜ฉ. I just wanted to run up and hug her, but she loses it so much more when I console her, which I get (cuz I’m mom and she knows she can just let it gooooo let itttt goooo ๐ŸŽถ๐Ÿ˜‚๐Ÿ™ˆ๐Ÿ™Š). But I didn’t๐Ÿ™…๐Ÿผ because she was pulling through๐Ÿ‘๐Ÿผ๐Ÿ™Œ๐Ÿผ (unless she looked at me ๐Ÿ™ˆthen she welled back up๐Ÿ˜ญ), but I was just so amazingly impressed at how much my baby has grown up. And after the ceremony, she blossomed into her wonderful little confident self again ๐Ÿ’ช๐Ÿผ and we stayed for dinner and a pool party (not your usual preschool graduation, but it was such a fun time for the kids and parents tooooo, even though there were moments of oh my god I’m ready to goooo๐Ÿ˜ฌ๐Ÿ™ˆ).

So that’s where I’m at in life โ˜บ๏ธNow I need to figure out what the heck I’m going to do with my girls (5 yrs old & almost 2 yrs old) all ๐Ÿ‘๐Ÿผsummer๐Ÿ‘๐Ÿผ! But in the meantime, one thing I know that will always be apart of our summer is…

TACOS!

And I know, I know, tacos isn’t only a summer meal. My family, we eat tacos at least once a week (not kidding lol). Sometimes we’ll skip a week of taco nochรฉ, but you better believe we’ll eat it the next week.

I found my taco seasoning recipe on AllRecipes years ago. And it is THE best (seriously, so yummy๐Ÿ™Œ๐Ÿผ). It IS spicy๐Ÿ”ฅ๐Ÿ”ฅ๐Ÿ”ฅso I’ve altered the recipe since we have 2 little ones that thoroughly enjoy taco nochรฉ ๐Ÿ˜‹and since Marley can’t quite handle a taco shell yet, I make her a taco bowl ๐Ÿ‘Œ๐ŸผI’m going to link the original recipe, here, and I’ll post my altered version โฌ‡๏ธ

DIY TACO SEASONING (altered version, toddler/kid friendly)

  • 1 TBSP chili powder
  • 1/2 TSP garlic powder
  • 1/2 TSP onion powder
  • 1/2 TSP oregano
  • 1/2 TSP smoked paprika
  • 1 1/2 TSP ground cumin
  • 1 TSP salt
  • 1/2 TSP pepper

I usually quadruple this recipe and put it in a seasoning jar to get multiple uses out of it (instead of making it every single time, which I stupidly did for far too long and am so happy I keep this stuff in a jar now! I might have to start using a mason jar ๐Ÿ˜‚๐Ÿ˜ฎ๐Ÿ™Œ๐Ÿผ it’s that good!)

I had SO many zucchinis left over from the week that I never ended up using with our dinners (mom fail. I just wasnโ€™t in a zucchini mood!๐Ÿ™†๐Ÿผ). So when I saw that one was starting to look sad and growing a little fuz๐Ÿ˜ฌ (eeek๐Ÿ™…๐Ÿผ) I figured Iโ€™d better use up the other 4 before they start too (I hate wasting food and rarely do, just sometimes shit happens, ya know?!๐Ÿ™‹๐Ÿผ).

When Iโ€™m on the hunt for a recipe, I resort to All Recipes, because I feel like itโ€™s just easier and faster to find a specific recipe on this site. Pinterest is absolutely amazing too, but I get way too side tracked with some things that are totally left field ๐Ÿ™ˆ(clothing, nails, furniture, crafts, I mean… I was just looking for a tuna casserole recipe ๐Ÿ™†๐Ÿผbut shit is too catchy these days! I’m so guilty ๐Ÿ™ˆ Pinterest is an addiction ๐Ÿ™ˆ๐Ÿ™Š). So on that noteโ€ฆ

I found a freaking delicious recipe. Quickly,๐Ÿ˜‚on All Recipes .

The only things I changed were:

  • Used vinegar, instead of lemon juice (just 1/2 a tablespoon)
  • Unsweetened vanilla coconut milk, instead of normal milk
  • Canola oil, instead of vegetable (all I had on hand๐Ÿ™†๐Ÿผ)
  • Added nutmeg (because we looove nutmeg in this household!)

I promise๐Ÿ™‹๐Ÿผ to never ever post a recipe unless itโ€™s family approved๐Ÿ’ช๐Ÿผ lol so trust me, when I say, these are legit yumminess๐Ÿ‘…. And  vegetables are snuck in๐Ÿ™Œ๐Ÿผ (these girls only like broccoli๐Ÿ˜, so when I can get another vegetable a chance๐Ÿ˜‚, I feel vindicated!)! It felt so good watching those cuties demolish them!๐Ÿ˜Š
